In the summer of 2012 we constructed a 'walk in' meat smoker. A 14ft by 14ft constuction with a 4ft box 20ft up in the air. The walls are made 'round log cabin' style with locally sourced timber and the roof finished with recycled 2nd hand tin sheets. A truly sustainable building! The design of the smokehouse is typical of smokehouses found north of the arctic circle which the sami people have used to smoke their reindeer meat for thousands of years.
We have begun experimenting to produce some unique smoked products from our own reared animals.
